1 dz. hard boiled eggs (yolks separated from whites)
1 c. shredded yellow cheese
1/2 -3/4 c. mayonnaise
1/2 - 3/4 c. pickle relish
Parsley and pimento for garnish

Directions:
Directions:
Grate or mash egg yolks and set aside. Grate egg whites and set aside. Spread bottom of casserole with the grated cheese. Spread a thin layer of mayonnaise on top of the cheese, and then a layer of pickle relish on top of the mayonnaise. The egg yolks are the next layer and the final layer is the egg whites. Top with a little shredded cheese or crumbled egg yolk. Garnish with the parsley and pimento.
