1/4 lb. onions
1-1/2 ribs celery
1/4 lb.butter
2 tbsp. flour
9 oz. evaporated milk
1 egg yolk
1 lb. shrimp peeled and chopped coarse
5 oz. mild cheddar cheese, grated
salt and pepper to taste

Directions:
Directions:
Saute onions and celery in butter until soft. Add flour and blend. Add milk and blend. Remove from heat. Add egg yolks, shrimp, salt, pepper and cheese. Put in individual casseroles; top with little more cheese and bake in a 350 oven for 30 minutes.
