1 Pre made pie crust/tin.
6 T. Cornflour.
1/4 tsp. Salt.
8 oz. Sugar - Extra fine.
7 oz. Water.
3 Eggs, separated.
2 T. Unsalted butter.
1 T. Lemon zest.
7 T. Fresh lemon juice.
1/4 tsp. Cream of tartar.
6 T. Extra fine sugar.

Pre- heat oven to 400 degrees.

In double boiler combine cornflour, salt, and 4 oz of sugar. Slowly add water to double boiler.

Place over boiling water and cook, stirring constantly until mixture thickens.
Cover and cook for 10 minutes, stirring occasionally.

Stir a small amount of hot mixture into egg yolks which have been mixed with remaining 4 oz. of sugar.

Immediately pour back into remaining hot mixture over boiling water. Blend thoroughly and cook 2 minutes longer, stirring constantly.

Remove from heat and add butter , lemon juice and zest. Gently blend.

Remove from heat and cool to room temperature with out stirring.

Pour into pie crust pan. and set aside.


To make Meringue:

Add cream of tartar to egg whites and beat till frothy.

Gradually beat in sugar and continue beating until mixture is stiff and glossy.

Spread meringue lightly on filling, sealing edges of crust.....make high mound.

Bake in hot oven at 400 degrees F. until meringue is delicately browned...8-10 minutes.
