¼ cup Extra virgin olive oil
4-6 anchovies (depending how much you like them or replace with 1 tsp anchovy paste);
1 clove of garlic finely chopped;
1 lb. angel hair pasta;
Parmesan cheese (to grate over pasta & sauce);
1 tablespoon parsley (finely chopped)

In a saucepan whisk together EVOO, anchovies and garlic for 3 minutes over low heat.

In the meantime prepare angel hair pasta. Mix pasta into saucepan and sprinkle with parsley and cheese.

This is my husband’s favorite pasta dish. It is plain and simple but a wonderful way to use pungent anchovies in a tasty dish. This dish is great with a pinto grigio or a sturdy zinfandel.
