1 sheet frozen puff pastry;
1-2 tablespoons of butter;
½ onion chopped finely;
¾ cup thinly sliced mushrooms;
Chicken or turkey livers 4-6 oz.;
½ teaspoon fresh thyme;
Tomato paste (optional – I use the kind in the tube);
Pepper to taste;
1 egg for egg wash (optional)

Sauté onion, mushrooms and liver in butter. Let cool. Transfer to cruisinart and pulse until combined. Add thyme and pepper.

Roll out thawed puff pastry on lightly floured surface. Mixture must be cool enough to spread. Spread mixture across entire surface. Skirt a line of tomato paste down the middle of the sheet over the mixture (optional). Roll one side into a Jelly-roll until it meets the middle. Then roll the other side until it meets the middle. Wrap in plastic and refrigerate 1-2 hours.

Preheat oven to 400 degrees. Slice roll into 3/8 inch slides and place slices cut side up on greased baking sheets (or baking sheet lined with parchment paper). Brush each piece with egg wash. Cook for 10-20 minutes.

I’ve made these as an appetizer using the turkey liver (on Thanksgiving) or chicken liver. You can improvise with this mixture and leave out the liver or you can always substitute the liver with cheese.
