Cheeseburger Soup

1 lb ground beef

¾ cup chopped onions

¾ cup shredded or chopped carrots

¾ cup celery

1 tsp basil

1 tsp parsley flakes

4 tbsp butter or margarine, divided

3 cups chicken broth (canned or oxo cubes and water)

4 cups diced and peel potatoes

¼ cup flour

2 cups cheez whiz or shredded cheddar cheese

1 ½ cups of milk

¾ tsp salt

½ tsp pepper

¼ cup sour cream

Directions:
In a large saucepan, brown beef, drain and set aside. In the same saucepan, sauté onions, carrots, celery, basil and parsley in 1 tbsp butter until veggies are tender; about 10 min. Add broth, potatoes and beef. Bring to a boil. Reduce heat, cover and simmer for 10 – 12 min. or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour, cook and stir 3 – 5 min or until bubbly. Add to soup and bring to a boil. Cook and stir for 2 min. Reduce heat to low. Add cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat, blend in sour cream
