15 whole graham crackers
1-1/2 sticks butter, melted
2 large pkg cream cheese
1 c. sugar
1 pkg lemon Jello
1/2 c. boiling water
1 envelope Knox gelatin + 1/4 c. cold water (optional)
1-1/2 pt. whipped cream (whipped)

Directions:

Crush graham crackers and add butter, mixing well. Put this crust in the bottom of a spring-form pan. Save some of this mixture for the top of the cake.

Cream together cream cheese and sugar, mixing well to remove all small lumps. Stir hot water into Jello; add to cream cheese mixture. For firmer cheesecake, add 1 envelope of Knox gelatin mixed with 1/4 cup cold water and mix well. Fold into whipped cream. Pour into pan and refrigerate overnight.
