1 c. River Rice (NO instant rice!!)
2 cans crushed pineapple, undrained
1 bag miniature marshmellows
2 pt whipping cream
2 tbsp. powdered sugar
1 tsp. vanilla

Directions:
Directions:
Cook the 1 cup rice as directed on box. Let cool completely.

Add the 2 cans of undrained crushed pineapple and the 1 bag of miniature marshmellows. Mix well.

Refrigerate at least 6 hours; overnight is best.

When ready to serve:

In a separate bowl, whip the 2 pints whipping cream, the 2 tbsp. powdered sugar and the 1 tsp. vanilla until stiff peaks form.
Combine whipped mixture to the rice mix and stir well until well blended.
Serve and enjoy!
