2 c. sugar
1 c. butter, softened
5 eggs
1 tsp. coconut extract
1 c. buttermilk
2 c. flour
1/2 tsp. baking powder
1 tsp. salt
1 small can (4 oz.) coconut

Icing:
1/2 c. butter
1 c. sugar
1 tsp. coconut extract

Directions:
Directions:
Grease and flour pan. Sift all dry ingredients. Cream sugar and butter. Add eggs one at a time. Add coconut extract, buttermilk Slowly mix in flour mixture. Add coconut. Bake at 350º F. for 1 1/4 hours or at 325º F. for 1 1/2 hours.
For icing, mix butter, sugar and coconut extract and bring to a soft boil. Pour over warm cake.
