8 egg yolks
1 tsp. ground ginger
1/3 c. brandy
1 c. apple juice
1/4 c. brown sugar
1/2 tsp. vanilla extract
1 c. fresh or frozen berries (whatever is in season)

Directions:
Directions:
Using a metal mixing bowl or double boilder, mix egg yolks, ginger, brandy, apple juice, brown sugar and vanilla extract. Whisk until smooth. Heat over simmering water. Do not allow any of the water to touch the bowl you are using. Whisk the mixture until thick, which usually takes about 5 minutes. The Sabayon should have a consistancy of whipped cream.
Use 4 long stemmed wine glasses and place berries in them so each glass is about 1/2 full. Pour warm mixture over the berries, filling nearly to the rim. Serve while warm.
