1 (6 oz.) package lemon Jello
4 c. boiling water
2 c. grated carrots (2-4)
1 large can crushed pineapple (drained*save juice)
1 c. chopped walnuts or pecans(optional)

Dressing
1/2 c. mayonaise

Directions:
Directions:
Disolve jello - mix in rest of ingredients. Pour into 9 x 14 inch pan. Chill overnight.
Mix a small amount of pineapple juice in mayonaise to make a dressing. Spoon on top of each serving.
