1 jar (10 oz.) mint jelly
3-4 tbsp. water
Vanilla ice cream
shredded coconut

Directions:

Mint Sauce: Heat 1 jar (10 oz.) mint jelly and add 3-4 tbsp. of water, stirring occasionally until mint jelly is melted. Strain if too foamy and cool.

Snowballs: 1 scoop (snowball size) of vanilla ice cream and freeze until slightly firm.
Roll snowballs into shredded coconut and freeze again until ready to serve guests.
At serving time, place each dessert bowl on a tray and pour in mint sauce to just coat the bottom. Add coconut coated ice cream balls and drizzle remaining mint sauce on top. Garnish with a fresh mint sprig.
