1 (9 inch) unbaked pie shell
Rind of 2 lemons
1 1/2 c. sugar
4 eggs
1/4 c. milk
1/3 c. lemon juice
1 tsp. flour
2 tbsp. cornmeal
1/4 c. melted margarine or butter

Directions:
Directions:
Preheat oven to 350º F. Peel 2 lemons thinly so there is very little of the white pith. Fit your food processor with the steel blade and turn on. Drop lemon rind in and 1/2 c. sugar. Grind until it becomes a paste. Stop the machine. Add the remaining ingredients; pulse until well mixed. Pour mixture into an unbaked pie shell and bake in the oven on lower rack for 35-45 minutes. Toothpick test the center until it comes out clean. Cool on wire rack. Top with whipped cream and add 1 lemon slice in the center with a few dabbles of lemon zest.
