1 1/2 to 2 c. cooked mashed yellow squash
1 1/4 c. sugar
4 eggs, separated
1/2 stick margarine or butter
1 large can evaporated milk
1 tbsp. lemon extract

Directions:
Directions:
Beat egg yolks, sugar and milk in bowl. Melt butter in squash while it's hot. Beat, and fold in squash. Beat egg whites until stiff. Then fold into squash mixture. Add lemon extract. Pour into pie shells. Sprinkle with coconut and nutmet. Bake at 40 minutes at 350º F.
