3 large eggs (4 medium)
1 tsp. dry mustard
16 oz. cottage cheese
1 c. grated cheese
1 large onion (chopped)
1 pkg. frozen chopped spinach, well drained
1 pkg cornbread mix (Jiffy)
1 stick butter

Directions:
Directions:
Beat eggs and dry mustar. Add cheese and cottage chees and mix together. Add onion and drained spinach ( or broccoli); mix together. Add cornbread; mix andand melted butter, mix well. Spray 9 x 13 pan or large iron skillet. Pour in mixture. Bake at 350º ffor 45 min. (until brown on top.)
