4 large cooked and mashed sweet potatoes
3 eggs
1 tbsp. coconut extract
1 tbsp. lemon extract
1 small can crushed pineapple (undrained)
3/4 stick butter
1 1/2 c. sugar
1/4 c. milk
1/4 tsp. nutmeg
1-2 c. marshmallows

Directions:
Combine all ingredients, turn into greased casserole dish. Bake at 350º F. until firm. Cover top with marshmallows, then brown slightly.
