1 lb. Jumbo Lump Crabmeat
1 med. onion, chopped
1/2c. butter
1c. fine, dry, plain bread crumbs
3 eggs
1 tsp. salt
1 tsp. dry mustard
a few sprigs of fresh parsley leaves, finely chopped
2 tbsp. heavy cream
All purpose flour

Flake crabmeat and check for shells.
Cook chopped onion in a 1/4c. butter until translucent and limp. Add breadcrumbs, mix well. Beat eggs and add to crabmeat. Combine with crumb mixture, salt, mustard, chopped parsley and cream. Shape into 4 large or 8 small patties. Coat in flour and saute in remaining butter until delicately brown on both sides.
