"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Cinnamon Sugar Chips, by Taryn Bentley, is from Marci Cooks,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
8 flour tortillas (normal burritos size), 2 T. sugar, 1/2 t. cinnamon
Mix cinnamon and sugar. Use squirt bottle, brush or fingers to lightly ocat tortillas with water. Sprinkle with cinnamon/sugar mix. Don't sprinkle too heavily. Cut before you cook them to make 8 chips per tortilla. Arrange in a single layer on cookie sheet or stone. Don't allow them to touch. Cook at 400º for 8-10 minutes.
