1/3 cup chopped onion
1/4 teaspoon pepper
3 tablespoons butter
1/8 teaspoon cayenne pepper
6 cups butternut squash,
3 cans chicken broth
peeled & cubed
salt to taste
1/2 teaspoon dried parsley
8 ounces cream cheese

Directions:
Directions:
Saute the onions in butter until tender. Add all but the cream cheese. Boil twenty minutes or until squash is tender. Add cream cheese. Puree in batches until smooth. Return to pot, heat through but don't boil. Serve with French bread and green salad. Forgiving of spice substitutions.
