3 large eggs 2 cups sugar 1 cup vegetable oil 2 cups grated peeled zucchini 3 cups flour 1 tsp salt 1 tsp baking soda 1/4 tsp baking powder 3 tsp cinnamon 1 cup coarsely chopped walnuts
Combine 4 first ingredients. Combine dry ingredients and add to zucchini mixture and stir until well blended. Stir in nuts. Put batter into 2 well greased loaf pans. Bake for 1 hour at 350 degrees or until toothpick inserted in the middle comes out clean. Makes 2 loaves.
