2 Large Figs, finely choppd
2 c. Flour plus 2 tbl for dredging
1/3 c. Sugar
1 tbl. Baking Powder
1/2 tsp. Salt
1 c. Milk
1 Egg, beaten
1/4 c. Unsalted Butter, melted

Directions:
Directions:
Preheat oven to 450º. Dredge figs in 2 tablespoons of flour, tossing lightly to coat; set aside. Combine remaining flour, baking powder and salt in a medium bowl; sift together 4 times. Stir together the milk, eggs and butter; add to the dry ingredients, stirring until moistened. Fold in reserved figs. Spoon into greased muffin pans, filling 2/3 full. Bake for 20 minutes or until golden. Remove from pans. Serve warm. Makes about 1 dozen muffins.
