8-10 lb Sirloin or Rump Beef Roast
2 lg Green Pepper (chopped)
2 md Onion (chopped)
1 lg can Italian Tomatoes (squeezed or cut into smaller pieces)
Jalapeno's to taste
1 envelope Lipton Onion Soup Mix
1 can Beef Broth or dissolve 4-5 beef bullion cubes
1 tsp Salt
1 tsp Pepper
1 tsp Garlic Salt
1 tsp Italian Seasoning
1 tsp Adolphs Meat Tenderizer
Large Cooking Bag

1 Bay Leaf

Directions:

Rub flour, salt, pepper, garlic salt & meat tenderizer on all sides of roast. Brown on all sides. Place in tightly covered roaster or cooking bag. Cook very slow at 275. The meat will make its own juices - DO NOT ADD WATER. When fork slides in easy but still lightly pink, set aside and cool. When meat is cool to handle, slice very thin across grain. Add tomoates, onion, green pepper, jalapeno's, Lipton onion soup, and beef broth to juices. Add sliced beef, making sure the juices coat meat. Cook very slowly on top of stove. It will take 2 stove eyes. Put lid on while peppers, onions cook down. Then take the lid off.

The juice will look thick but as the peppers and onions cook, it will thin out. Serve on Kaiser Rolls. Have an extra dish of jalapeno's near by.
