2 c sugar; 1 c shortening; 6 ripe bananas; 4 eggs; 2 tsp baking soda; 2 1/2 c unbleached flour, sifted; 1 tsp salt
Cream sugar and shortening til blended. Add bananas and beaten eggs. Add rest of ingredients; Do not overmix. Pour into greased muffin tins or baking cups. Bake at 350º for 25-30 mins. (Variation: Can substitute 1 c date crystals/sugar and 3/4 c honey for sugar.)
