8-12 servings instant mashed potatoes, prepared according to directions. (You may want to add some extra dry potatoes to increase the thickness.) Some people insist on using real potatoes.
1 pkg. cream cheese, softened
1/2 c. sour cream
1 stick margarine (optional)

Directions:
Directions:
Mix the cream cheese, sour cream and margarine with an electric mixer. Stir into potatoes. Bake for 1/2 hour at 350; 45 minutes at 325. These are really good with Cherry Chicken Jubilee.

You may want to sprinkle with grated cheddar cheese and return to oven until cheese melts if you are not serving gravy.
