Blueberry French Toast Recipe

12 slices day old bread without crusts
1 pkg. (8 oz.) cream cheese
1 c. fresh or frozen blueberries
12 eggs
2 c. milk
1/3 c. maple syrup or honey

Sauce
1 c. sugar
2 T. cornstarch
1 c.water
1 c. blueberries
1 T. butter or margarine

Cube bread; place half in greased 9 X 13 pan.
Cut cream cheese into half inch cubes. Put cream cheese over bread. Top with blueberries and remaining bread. In large bowl beat eggs, add milk and syrup. Mix well. Pour over bread mixture. Chill 8 hours or overnight. Remove from refrigerator 30 min. before baking. Cover and bake at 350º for 30 minutes. Uncover and bake 30-45 minutes more. Should be brown on top.
Sauce:
Combine sugar, cornstarch and water. Boil for 3 minutes, stirring constantly. Stir in blueberries; reduce heat; simmer for 8-10 or until berries have burst. Remove from heat and stir in butter. Serve warm with the egg dish.
