4 chicken cutlets(about 4 oz each), pounded to 1/4 inch thick
1 egg
1 cup seasoned bread crumbs
1/4 lb mozzerella or provolone cheese cut into 1/2-inch cubes
2 plum tomatoes, cored, seeded and each cut into-6 wedges
1 small onion, cut into 1/2-inch wedges

Cut each cutlet in half lengthwise.
Place egg and breadcrumbs in separate shallow glass dishes. Dip chicken piece first in egg, then breadcrumbs to coat completely.
Place 1 piece cheese, 1 tomato wedge and 1 onion wedge on the top of 1 chicken piece. Roll up chicken around the filling. Tie chicken securely in several places with kitchen string. Repeat with remaining chicken pieces.
Meanwhile, heat gas grill to medium-high heat or prepare charcoal grill with medium-hot coals. Grill chicken
