1 1/2 C pumpkin
1/2 C brown sugar
1/2 C honey
2/3 C vegetable oil
2 eggs
1 C flour
1/2 C oats
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 tsp ground nutmeg
1 T ginger powder
1/4 C pecans (optional)

Directions:
Directions:
In a bowl blend pumpkin, sugar, honey, oil and eggs thoroughly. Mix dry ingredients in another bowl. slowly add dry mixture to wet mixture stirring constantly. Stir until all are moistened. Fold in nuts. Pour into greased loaf or bunt pan. Bake at 350 for 45-55 minutes. Remove from pan, cool slightly and serve warm.
