1 large cucumber, sliced thin
1/2 of an 8oz package cream cheese
2 T fresh basil (1 T dried)
8 slices firm whole wheat or multi grain bread
2 large apricots, nectarines or peaches, OR 1 large mango
1/2 C arugula or cilantro

Directions:
Directions:
Thin slice cucumbers and set aside. Combine cream cheese and basil until well blended. Pit, peel and thinly slice the fruit. Spread cream cheese evenly on the bread slices.Top 4 slices of bread with cucumbers, fruit slices and arugula or cilantro. Top with the other slices of bread, cheese spread down. Cut in half and serve.
