Saute:
1/4 c. Margarine,
1/2 c. chopped onion,
1/2 c. coarsely chopped green onion,
1/2 c. chopped carrots,
Sweet & Sour Sauce:
3/4 c. catsup,
2 tbsp. vinegar,
1/2 c. firmly packed sugar,
1/2 tsp. pepper,
dash ground ginger,
1 tbsp. soy sauce,
1 clove garlic minced,
1 cup pineapple chunks
Chicken:
6-8 pieces chicken (seasoned)

Saute onions, peppers, and carrots in butter for 5 minutes.

Sweet & Sour Sauce: Add the onion, peppers and carrots mixture and cook on medium heat, stirring constantly until mixture boils. After it comes to a rolling boil, and 1 cup drained pineapple chunks.

Chicken: Arrange chicken in a 13x9x2 in baking pan. I spray my dish with Pam. Pour sweet and sour sauce over all. Bake covered for 45 minutes and 30 minutes uncovered at 350º.
