1 lb. fresh Brussels sprouts, trimmed
2 tbl. Olive Oil
3 oz. thin slices pancetta, coarsely chopped
2 garlic cloves, minced
Salt and pepper to taste
3/4 c. Low sodium chicken broth

Directions:
Directions:
Partially cook brussels sprouts in a large pot of boiling salted water, about 4 minutes, drain.
Meanwhile, heat oil in a heavy skillet over medium heat. Add the pancetta and cook until beginning to crisp, about 3 minutes. Add the garlic and fry until pale golden, about 2 minutes. Add brussels sprouts to same skillet and cook until heated through and beginning to get brown, about 5 minutes. Season with salt and pepper. Add chicken broth and simmer until the broth reduces just enough to coat the brussels sprouts, abot 3 minutes. Serve. Will serve about 4 people.
