3 Slightly beaten eggs,
1/4 C Sugar,
2 C Milk, scalded,
1/2 tsp. Vanilla,
1/4 tsp Salt,
1 C Rice (cooked - not instant),
Raisins or dried cherries (optional)

Directions:
Directions:
Beat together eggs, sugar and 1/4 tsp salt.
Slowly stir in slightly cooled milk and vanilla. Mix well.
Put rice (and raisins or cherries) in 1 qt. casserole dish and
pour milk mixture over top.
Put hot water 1" in jelly roll pan and put casserole dish in that.
Bake 325 degrees about 60 min. or until knife inserted near
center comes out clean.
