1 lb. Red Beans
1/2 cup Crisco Oil
1 lb. Ham seasoning or smoke sausage
1 lg. Onion
1/2 Bell pepper
1/2 cup Parsley
1/2 cup Shallots

Directions:
Directions:
In a large pot, cover beans with 3 quarts of water. Cover pot and let water come to a boil, reduce heat. Cook 1 1/2 hours. Add ham seasoning, onions and bell peppers. Cook for another 1 1/2 hours are until beans are creamy and tender. Add parsley shallots, salt and pepper. Serve over rice with Fresh Sausage or BBQ Smoked Sausage.
