2 cups cooked and cooled cous cous grains
1 cup peeled and seeded cucumbers
1 cup chopped tomato
1 med onion chopped
1/2 cup chopped parsley
1/3 cup oil
2 to 3 tablespoons red wine vinegar or lemon juice
1 tsp dijon mustard
salt and pepper to taste
chic peas if desired

Directions:
Directions:
Combine first five ingredients in a large bowl. Mix oil, vinegar or lemon juice, mustard and salt and pepper together. Whisk to blend and pour over cous cous and vegetables. Toss gently to combine. Chill and serve. Good served in a bowl or on lettuce leaves.

This is a family favorite and one which gets better as leftovers. Makes a great cold salad and snack!
