1 4-5 lb. deer roast stuffed with garlic.
1 1/2 cup chopped onion
1 cup chopped bell pepper
3 medium sized potatoes peeled and cubed
1 cup oil
1 cup flour
1 can rotel
1 tablespoon chopped garlic
1 cup white cooking wine
2 cups water (enough to cover roast and potatoes)
Salt and red pepper to taste

Directions:
Directions:
Season and stuff roast with garlic. In a 5 qt. black iron pot,
with a little oil, brown all sides of roast for 4 minutes and then
set aside. In the same pot, on low heat, add flour and oil and
make a dark roux; stirring constantly. Add onions and bell
peppers; cook for 15 minutes or until onions are clear. Add
wine, potatoes, garlic and rotel. Cook over medium heat for
10 minutes. Add roast and water
to pot. Stirring occasionally, cook on low heat for about 2-3
hours. When roast is tender, cut it into slices and continue to
cook for 20 or 30 min. Serve over rice.
