6 oz. penne pasta, cooked and drained
½ lb. fresh mushrooms, sliced
1 T. olive oil
1 can undrained diced tomatoes
1 T fresh basil OR 1 t. dried basil
¼ t. salt
1 bell pepper, diced
Feta cheese

Directions:
Directions:
Sauté pepper and mushrooms in oil for 5 minutes. Add tomatoes, basil and salt – cook and stir 5 minutes. Drain pasta and add to skillet. Stir in cheese. Heat through. **I usually just serve the feta on top of individual servings.
