3 ripe tomatoes, washed, seeded, and cut into medium pieces
3/4 c. fresh basil, washed, dried, with the stems removed
3/4 c. olive oil
2-3 garlic cloves, peeled and diced
Salt to taste
Parmesan or Romano cheese to taste, shredded
Pasta of choice

Mix first four ingredients together in a medium bowl. Cover with saran wrap and let set on counter for 2-3 hours to let flavors mix.
Cook pasta according to package directions. Drain, rinse, and put into serving dish or bowl. Top with tomato mixture and cheese. Salt to taste

Tomato mixture can also be used for a topping for bruschetta. Warm slices of Italian bread (or grill lightly) and top with mixture.
