24 slices baguette or small French bread (1/4 to ½ inch thick)
2 tbsp. olive oil
½ c. mayonnaise
¼ c. grated Parmesan cheese
2 tbsp. fresh chives, chopped
2-4 tbsp. capers, drained and washed off
¼ tsp. garlic powder
½ lb. roast beef, thinly sliced and cooked
fresh chives, chopped
4 medium tomatoes, sliced

Directions:

Heat oven to 350 degrees.
Place bread slices on ungreased cookie sheet; brush lightly with oil.
Bake for 8-10 minutes or until crisp.
Cook 5 minutes or until completely cooled.

In a small bowl, combine mayonnaise, cheese, 2 tbsp. chives, capers, and garlic powder; mix well.

Mayonnaise mixture tends to be “a little on the skimpy side,” so be generous with the mayo, capers, etc.
Spread mayonnaise mixture onto bread slices, and top with roast beef and tomato slice. Garnish with chives.
