1 lb. Camellia red bean
1 large onion chopped
4 cloves garlic minced
2 bay leaves
2 tbsp. bacon fat
1/2 lb. ham seasoning
1/2 lb. Hillshire Farm smoke sausage sliced
2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. red pepper
8 -10 cups of water

Directions:
Directions:
Rinse beans and place in a 5 qt. or larger pot. Add water and all other ingredients. Bring to a boil for 5 minutes. Then cook over low fire for 2 hours, or until tender. Mash 1/4 cup of beans and stir in to pot. This will make them creamy. If necessary, add more water. Serve over rice with New Orleans style French bread.
