2 tbsp. flour
Salt and freshly ground pepper
Pinch of paprika
Pinch of cayenne
1 medium Vidalia or other sweet white onion, thinly sliced
½ c. Canola oil

Directions:
Directions:
Whisk flour, salt, pepper, paprika, and cayenne in the mixing bowl. Toss sliced onion lightly in flour, shaking off excess. Heat oil in saucepan. Fry the onions until golden, 3 to 4 minutes, tossing them constantly with the tongs. Drain the onions on paper toweling. Serve immediately on potatoes.
