3 Large tomatoes- quartered
2 tblsps tomato paste
1 medium onion- sliced
1/4 cup chopped fresh parsley
1 clove garlic-chopped
1/4 cup chopped fresh basil (or 1 tsp dried)
1 1/4 cup chicken stock
1 tblsp chopped fresh thyme ( or 1/2 tsp dried)
2/3 cup milk
salt and pepper to taste


Directions:
Directions:
In a saucepan combine tomatoes, onion, garlic and stock. Cover and simmer for 15 minutes. Blend or chop tomatoes. Add tomato paste, stir in parsley, basil, thyme and milk. Season to taste with salt and pepper.

You can also increase the stock to 2 1/2 cups and omit the milk.
