6 to 8 fresh peaches, peeled
Confectioners' sugar and cinnamon to taste
1 cup flour
1/2 tsp baking powder
1/8 tsp salt
2 sticks softened butter
1 cup granulated sugar
1 egg, beaten
1/2 tsp vanilla

Directions:
Directions:
Mix peaches with desired amount of confectioners' sugar and cinnamon in bottom of 9x13 inch baking pan. Mix together flour, baking powder, and salt. Cream together softened butter and granulated sugar and add to flour mixture. Fold in egg and vanilla. Spread cobbler mixture over fruit and bake in preheated 375º oven for 35-40 min. Dust with additional confectioners' sugar and serve with ice cream while cobbler is still warm
