Baked Potato Soup Recipe

1/4 cup butter or margarine
1/4 cup onion, chopped
1/4 cup flour
1 (14.5 oz.) can chicken broth
1 (12 oz.) can evaporated milk
3 medium baking potatoes
shredded cheese (optional)
bacon bits (optional)

Directions:
Directions:
Melt butter in a large saucepan over medium heat. Add onion, stirring occasionally, 1 to 2 minutes until tender.

Stir in flour, gradually stir in broth and milk.

Scoop potato pulp from one potato. Mash the one potato and add to broth mixture. Cook over medium heat until mixture comes to a boil.

Dice the two remaining potatoes and skins, add to soup. (I only add two of the three skins to the soup)

Top with shredded cheese or bacon bits.

I just bake the potatoes in the microwave and let them cool.
Grandpa likes the soup plain, without the toppings. This is a real good and easy recipe. It is very good warmed up. I usually double this recipe.
