1 c chopped Spanish onions
Olive oil
1 c Sliced Portobello and Shiitake Mushrooms (optional)
1 tbsp chopped garlic
1 tbsp chopped fresh Basil
4 c Heavy whipping cream or:
2 c 1/2 & 1/2 and 2 c 2% milk
1 c Parmesan cheese
1 c White table wine
Salt and pepper to taste
1 lb cooked penne pasta
6 (4 oz ea) grilled chicken breasts

Saute onions in olive oil. Add garlic and mushrooms. Cook till tender. Deglaze pan with wine. Add salt, pepper and basil. Add cream and let reduce about 25%, stirring often. Add cheese. Stir, then mix with cooked warm pasta and grilled chicken. Garnish with shredded Parmesan cheese and chopped parsley.
