2 tbsp butter
1 large onion, chopped
1 green bell pepper, chopped
1 red pepper, chopped
2 carrots, chopped
2 (10 oz ea) pkg frozen corn kernels, thawed
1 1/2 c dry potato flakes
2 tsp salt
1/4 tsp ground black pepper
1/4 tsp ground cayenne pepper
3 c water
2 c milk
1 c half and half
1/2 c shredded cheese

Directions:
Directions:
Melt butter over medium high heat. Cook onion, peppers, and carrots until tender. Stir in corn, potato flakes, salt, ground peppers, and water. Bring to boil. Reduce heat. Cover and simmer for 10 minutes. Stir in milk and half and half. Warm only. Do not boil. Serve sprinkled with shredded cheese.
