6 tbsp olive oil
1/4 cup fresh lime juice
3 large garlic clove, pressed
2 1/2 tbsp chopped fresh cilantro
12 large shrimp - raw, peeled, deveined w/ tail intact
metal skewers
2 1/2 inch red onion slices
2 ounces crumbled feta

Directions:
Directions:
Mix first three ingredients and 1 tbsp cilantro in a large bowl.

Add shrimp, toss to coat.

Let stand 10 minutes.

Skewer onion slices and shrimp separatly.

Grill oninon until tender.

Coarsely chop onions .

Add onions and feta to marinade and bring to a boil

Grill shrimp until opaque.

Add remaining cilantro to marinade and spoon over shrimp.
