1/3 cup olive oil

1/4 cup Dijon Mustard

2 Tbsp. lemon juice

4 medium ripe tomatoes, sliced

6 oz. Mozzarella Cheese, sliced

1 small red onion, thinly sliced

1 Tbsp. small fresh basil leaves or chopped fresh basil

BEAT oil, mustard and lemon juice with wire whisk until well blended; cover. Refrigerate until ready to serve.

ARRANGE tomatoes and cheese on large serving platter or 6 individual serving plates; sprinkle evenly with onion and basil.

DRIZZLE with prepared dressing. Serve immediately.
