1 lb. ground beef
1/2 c. chopped onion
1/2 tsp. salt
1/2 tsp. pepper
2 (4 oz.) cans whole green chile
6 oz. shredded sharp cheddar cheese
4 eggs, beaten
1-1/2 c. milk
1/4 c. flour

Directions:
Directions:
In skillet cook beef and onion until beef is browned. Drain off fat. Add salt and pepper. Halve chiles crosswise and remove seeds. Place half of chiles in 10 x 6 x 2 baking dish, sprinkle with cheese. Top with meat mixture. Arrange remaining chiles on top. Combine remaining ingredients; beat until smooth. Pour over chiles. Bake at 350 for 45 to 50 minutes or until knife inserted just off center comes out clean. Let stand 5 minutes.
