2 lbs. of chicken breasts and thighs (with skin and bones)
2 cups each of celery, carrots, and onion
6 potatoes

Rinse chicken, slice vegetables to desired size. Be sure to cut vegetable the same size for even cooking. Put chicken and veggies into large bowl. Mix with enough olive oil to coat veggies and chicken, and numerous shakes each of basil (fresh or dried), parsley, oregano, garlic salt and pepper. Mix well with hands and rub seasonings into chicken. Bake 350º for about 1 hour. You can turn up to about 400º the last 30 minutes and broil chicken on high for about 5 minutes before serving to make brown on top.
