Ingredients: 7 lbs Plums, Pears, Green Tomatoes, Pickling Peaches, or Pickling Cucumbers 5 lbs sugar 6 C ( 3 pts ) White House Apple Cider Vinegar 5% 1 t Mace 1 t Cinnamon 1 t Ginger 1 t Celery Seed 1 t Whole Cloves

Directions:I use food-grade pickling lime. Must be Food-Grade! Follow directions on lime bag. *After cucumbers or tomatoes have been firmed* Boil ingredients. This is when I taste; and add a little more of this or that to suit my taste. Pour syrup over fruits/vegetables and refrigerate over night. Next day slow boil one hour. Pack in hot jars, working slices into place. Pour hot syrup over pickles. Remove air bubbles. Wipe rims with paper towel. Add lid and tighten ring to 'fingertip' tightness. Tight, but not real tight. Process 10 minutes in a Boiling Water Bath. **This kills the molds, yeasts, and bacteria picked up in the air when you ladled the pickles from the pot into the jars.** After removal from water bath, jars will begin vacuum sealing. Do Not invert jars! Leave undisturbed 24 hours. Remove rings. Wash and store for another time. Wash jars. Label and date. |
