3 to 3 1/2 Cups Grated Zucchini, With Peel
3 Cups Sugar
3 Cups Flour
1 Cup Cooking Oil
4 Eggs, Beaten
1 Teaspoon Baking Soda
1 Cup Chopped Nuts (optional)
1 1/3 to 2 Teaspoons Cinnamon
1 12 Teaspoon Baking Powder
1/2 Teaspoon Salt

Directions:
Directions:
Preheat oven to 300. Mix all ingredients in a large bowl. Pour into greased and floured loaf pans. Bake for 50-60 minutes until done.
